Recipe:

 

Ingridients

3 medium or 2 large onions, thinly sliced

Sliced mushrooms (a drained can would work, too)

2 Large chicken breast, sliced in half lengthwise

Salt and pepper

1/2 tsp italian seasoning

5 tbsp butter

1/2 cup of shredded parmesan cheese

4 tbsp. cream cheese

1 cup and 3 tbsp of beef broth

Italian shredded cheese

Preheat oven 400 degrees.

1. Season the chicken with oil salt and pepper.

2. Heat the pan and melt 3 tbsp of the butter.

3. Bring the pan to med-low. Add onions with mushrooms and 3 tbsp of the beef broth. Cook for around 15 minutes.

4. Get onions and mushrooms out of the pan and set aside, covered.

5. Sauté the chicken (around 5 minutes each side).

6. Remove chicken, add again the onions/mushroom, 2 tbsp of butter and 1/2 cup parmesan. Sauté for a minute or two, add the cup of beef broth and the cream cheese.

7. When it thickens, bring the chicken back, cover the chicken with the sauce and onions and sprinkle the italian shredded cheese on top (you can use swiss cheese too). Sprinkle the italian seasoning and some crack pepper.
8. Put in oven for 10 minutes, and if you want it to look like in the picture, give it an additional 5 minutes on broil setting.

Serve with a low carb veggie or a salad!
