Middle Eastern Chickpea & Black Bean😎


For the Salad:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste


  1. In a large mixing bowl, combine the chickpeas, black beans, cherry tomatoes, cucumber, red bell pepper, red onion, and fresh parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, ground coriander, paprika, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss everything together until well combined.
  4. Let the salad marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
