Nice ‘Steak’ & Guinness Pie

. Ingredients:

1 tbsp oil 1 x onion 1 x carrot 1 cup soya chunks 1 cup Guinness 1 tbsp tomato puree Thyme if you have 1/2 tsp garlic granules 1 x stock cube 1 tbsp flour
Instructions:Soak the soya chunks in the Guinness & half a cup of boiled water for an hour. Fry the onion & carrot on low heat until softened, add the softened soya chunks & remaining soaking liquid & cook on low until Guinness has reduced down. Add flour & mix, slowly add stock cube disolved in 1 1/2 cups water, stirring to avoid lumps, add garlic granules & tomato puree, herbs & simmer until desired thickness. Taste & adjust seasoning, add half tsp of sugar if needed. Leave to cool in pie dish. Make a simple pastry lid using 125g plain flour, 55g vitalite spread and a little cold water to form a dough. Roll out and top the pie, crimp the edges & poke a hole in the top. Cook for 45 min at 180.
