No Bake Chocolate Peanut Butter Balls
Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup honey or maple syrup
- 1 1/2 cups old-fashioned oats
- 1 cup shredded coconut (unsweetened)
- 1/2 cup ground flaxseed (optional)
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips (or chopped chocolate)
- A pinch of salt (if using unsalted peanut butter)
Instructions:
- In a large mixing bowl, combine peanut butter, honey (or maple syrup), and vanilla extract. Mix well until the ingredients are thoroughly combined.
- Add the oats, shredded coconut, ground flaxseed (if using), and a pinch of salt if your peanut butter is unsalted. Mix until everything is well incorporated.
- Fold in the mini chocolate chips or chopped chocolate into the mixture.
- Place the bowl in the refrigerator for about 15-20 minutes to let the mixture firm up slightly, making it easier to handle.
- Once the mixture has firmed up, take it out of the refrigerator. Scoop out portions of the mixture and roll them into bite-sized balls using your hands.
- Place the chocolate peanut butter balls on a parchment-lined tray or plate.
- Optional: You can roll the balls in additional shredded coconut, chopped nuts, or cocoa powder for extra flavor and texture.
- Chill the peanut butter balls in the refrigerator for at least 30 minutes to an hour, or until they are firm.
- Once chilled, the no-bake chocolate peanut butter balls are ready to be enjoyed! Keep them stored in an airtight container in the refrigerator.
