Recipe: No-bake Keto Cheesecake

Ingredients: For the crust:
1 1/2 cups almond flour
1/4 cup melted coconut oil
2 tablespoons powdered erythritol (or your preferred keto-friendly sweetener)
1/2 teaspoon vanilla extract
For the filling:
16 ounces cream cheese, softened
1 cup heavy cream
1/2 cup powdered erythritol (or your preferred keto-friendly sweetener)
1 teaspoon vanilla extract
Juice of 1/2 lemon
For the topping (optional):
Fresh berries or sugar-free fruit preserves
Instructions:
In a mixing bowl, combine the almond flour, melted coconut oil, powdered erythritol, and vanilla extract. Mix until the ingredients are well combined and resemble a crumbly texture.
Press the crust mixture into the bottom of a 9-inch springform pan, ensuring an even layer. Place the pan in the refrigerator to chill while preparing the filling.
