Oatmeal, apple and carrots!

Oatmeal, apple and carrots!

Oatmeal with apples and carrots sounds like a comforting and healthy breakfast! Here’s a simple recipe that combines the natural sweetness of apples, the earthiness of carrots, and the heartiness of oats for a delicious meal.

Ingredients:

  • 1 cup rolled oats
  • 2 cups plant-based milk (like almond, oat, or soy milk) or water
  • 1 apple, peeled, cored, and diced
  • 1/2 cup grated carrot (about 1 medium carrot)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1 tbsp maple syrup or agave syrup (optional for sweetness)
  • A pinch of salt
  • 1 tsp vanilla extract (optional)
  • Toppings (optional): Chopped nuts (like walnuts or almonds), raisins, extra maple syrup, or shredded coconut

Instructions:

  1. Cook the oats: In a medium saucepan, bring the plant-based milk (or water) to a simmer over medium heat. Once simmering, add the rolled oats and a pinch of salt. Stir occasionally, and cook for 5-7 minutes until the oats are tender and have absorbed most of the liquid. If you prefer a creamier texture, you can cook a little longer or add more milk as needed.
  2. Add the apple and carrot: Stir in the grated carrot and diced apple into the oatmeal. Add the cinnamon and nutmeg. Cook for an additional 3-5 minutes until the apple softens and the carrot is tender.
  3. Sweeten and flavor: Once everything is cooked, stir in the maple syrup or agave syrup (if using) and vanilla extract for extra flavor.
  4. Serve and garnish: Spoon the oatmeal into bowls and top with your favorite toppings, like chopped nuts, raisins, or coconut flakes. You can drizzle a little extra maple syrup on top if you want more sweetness.

This oatmeal is not only delicious but packed with fiber and vitamins from the apples and carrots. It’s the perfect way to start your day with a warm, filling, and nutritious breakfast!
