One Point Churro Pancakes
Ingredients:
- 1/2 cup pancake mix (you can use a low-calorie or whole wheat mix for healthier options)
- 1/2 cup water or milk (use almond milk or skim milk for lower calorie content)
- 1 teaspoon ground cinnamon
- 1 tablespoon granulated sugar or sugar substitute (such as stevia or erythritol)
- Cooking spray or butter for the pan
Instructions:
- Preheat Pan: Heat a non-stick skillet or griddle over medium heat.
- Mix Batter: In a mixing bowl, combine the pancake mix and water (or milk) until you have a smooth batter. If the batter seems too thick, you can add a little more liquid to achieve your desired consistency.
- Prepare Cinnamon Sugar: In a small bowl, mix together the ground cinnamon and granulated sugar (or sugar substitute). This mixture will be used to sprinkle over the pancakes.
- Cook Pancakes: Once the skillet is hot, lightly coat it with cooking spray or a small amount of butter. Pour small circles of batter onto the skillet to form pancakes. Cook until bubbles form on the surface of the pancake and the edges look set, then flip and cook until golden brown on both sides.
- Finish with Cinnamon Sugar: While the pancakes are still warm, sprinkle the cinnamon sugar mixture generously over the tops of the pancakes.
- Serve: Transfer the pancakes to a plate and serve warm. You can enjoy them plain or with a drizzle of syrup or honey, though keep in mind the additional calories from these toppings.
