ONION CAKE (VEGAN)
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons nutritional yeast (optional, for extra flavor)
- 1 cup plant-based milk (such as almond, soy, or oat milk)
- 1/4 cup olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (optional)
- Salt and pepper to taste
- Olive oil or vegan butter for greasing the pan
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Onions: In a skillet, heat a tablespoon of olive oil over medium heat. Add the thinly sliced onions and minced garlic. Cook until the onions are soft and translucent, about 5-7 minutes. Season with salt and pepper to taste. Set aside to cool slightly.
- Prepare the Batter: In a large mixing bowl, combine the flour, baking powder, salt, black pepper, and nutritional yeast (if using). Mix well. Add the plant-based milk and olive oil to the dry ingredients. Stir until just combined. Be careful not to overmix.
- Add Onions and Parsley: Fold in the cooked onions, garlic, and chopped parsley into the batter. Make sure they are evenly distributed.
- Bake the Cake: Grease a baking dish or cake pan with olive oil or vegan butter. Pour the batter into the prepared pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the onion cake to cool in the pan for a few minutes before slicing and serving. You can enjoy it warm or at room temperature.
