Peanut butter, banana & chocolate chip protein cookies

Ingredients:

  • 1 cup ripe bananas, mashed (about 2 medium-sized bananas)
  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1/2 cup vanilla protein powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Wet Ingredients:
    • In a large bowl, mash the ripe bananas with a fork.
    • Add peanut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
  3. Add Dry Ingredients:
    • In a separate bowl, combine rolled oats, protein powder, baking soda, and salt.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until everything is well incorporated.

  6. Scoop and Shape:

    • Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown.
