Ingredients:

  • 1 cup fat-free whipped topping (such as Cool Whip)
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 cup unsweetened almond milk (or any milk of choice)
  • Optional: a pinch of salt to balance flavors
  • Optional: sweetener (like Stevia or Splenda) to taste if you prefer it sweeter

Instructions:

  1. Mix the Pumpkin & Pudding: In a medium-sized bowl, whisk together the pumpkin puree and the dry sugar-free vanilla pudding mix until smooth.
  2. Add the Spices: Stir in the pumpkin pie spice, cinnamon, and a pinch of salt (if using).
  3. Add the Almond Milk: Gradually add in the almond milk and mix until well combined. The mixture should have a smooth, pudding-like consistency.
  4. Fold in the Whipped Topping: Gently fold in the fat-free whipped topping until fully incorporated. Be careful not to deflate the fluffiness!
  5. Chill: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld and the texture set.
  6. Serve: Once chilled, give the fluff a quick stir before serving. You can serve it in individual bowls or as a dip with fruit or graham crackers.
