1/2 Pumpkin with 1 onion and thyme, roasted in oven until tender and cooled
1 red pepper sliced and fried in air fryer
Mushrooms pan fried until tender
250g of Firm tofu crushed with a fork and then added fresh spinach,
Lightly oil pan and line with vegan short crust pastry,
Start the layers as you desire.. i put tofu layer in the middle to absorb the flavours and juice.
Once filled place your pastry lid on and give it a good seal.
Place fork marks on lid to allow steam out,
Bake in oven Gas 4 for 45mins,
Allow to rest for 10mins before placing on a cooling rack,
I served this with a fresh pasta salad and some pickles..
