Rasta Pasta

Ingredients
Onions, Garlic, bell peppers, thyme, scallion, mild jerk seasoning, coconut milk, vegan cheese (Parmesan and cheddar), and penne pasta
– Sauté the Onions, Garlic for two mins then add the Bell peppers.
– Add thyme stems, scallions and dry seasoning (I used all purpose and old bay) then continue to cook for a few mins. I also added about 1/2 teaspoon of mild jerk seasoning
– Add coconut milk and allow it to boil then add the cheese. I used the Follow your heart Parmesan and violife cheddar shreds but really you can use whatever vegan cheese you prefer.
– Taste and add more seasoning if you like.
– Allow the cheese to melt and the sauce to thicken.
– Add cooked penne and remove the thyme stems and you’re all set
