Ingredients:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon cocoa powder
1/2 teaspoon salt
1 teaspoon baking soda
1 cup non-dairy milk (such as almond, soy, or oat milk)
1/3 cup vegetable oil
1 tablespoon apple cider vinegar
1 tablespoon vanilla extract
1-2 tablespoons red food coloring (depending on desired intensity)
Tofu Cream Cheese Frosting Ingredients:
8 oz (225g) firm tofu, drained
1/4 cup vegan butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1-2 tablespoons lemon juice (adjust to taste)
Pinch of salt
Instructions:
For the Vegan Red Velvet Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, salt, and baking soda until well combined.
In a separate bowl, mix together the non-dairy milk, vegetable oil, apple cider vinegar, vanilla extract, and red food coloring.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Divide the batter evenly between the prepared cake pans.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
For the Tofu Cream Cheese Frosting:
In a food processor or blender, blend the drained tofu until smooth.
In a mixing bowl, cream together the vegan butter and powdered sugar until light and fluffy.
Add the vanilla extract, lemon juice, and a pinch of salt, and continue to beat until well combined.
Fold in the blended tofu until smooth and creamy. Adjust sweetness and tanginess to your liking by adding more powdered sugar or lemon juice if needed.
Assembly:
Once the cakes have cooled completely, place one layer on a serving plate or cake stand.
Spread a layer of the tofu cream cheese frosting over the top of the first cake layer.
Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
Optionally, decorate the cake with vegan sprinkles, chopped nuts, or fresh fruit.
