This savory sausage and vegetable stew is a hearty, flavorful dish that’s perfect for a satisfying weeknight dinner. Packed with vibrant vegetables and flavorful sausage, it’s a meal that comes together easily and provides a warm, comforting bite. The combination of smoky, seasoned sausages and tender vegetables simmered in a rich broth makes this a wholesome, filling stew. Plus, it’s customizable, so you can use any veggies you have on hand, making it perfect for a family meal or a meal-prep option.

Ingredients:

  • 1 lb (450 g) sausage (chorizo, Italian, or your preferred type), sliced
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 potatoes, diced (optional for a low-carb version, use cauliflower or omit)
  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 1 cup green beans, trimmed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Brown the sausages: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausages and cook until they are browned on all sides, about 5-7 minutes. Remove the sausages from the pot and set them aside.
  2. Sauté the vegetables: In the same pot, add the diced onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes. Stir in the carrots, potatoes (or cauliflower), and bell pepper, cooking for another 5 minutes to let them soften slightly.
  3. Add broth and tomatoes: Pour in the vegetable or chicken broth and add the diced tomatoes, smoked paprika, oregano, salt, and pepper. Stir well to combine all the flavors.
  4. Simmer: Return the browned sausage slices to the pot and bring the mixture to a boil. Once it starts boiling, reduce the heat to low, cover, and let the stew simmer for about 20-25 minutes, or until the vegetables are tender.
  5. Add the zucchini and green beans: In the last 10 minutes of cooking, stir in the zucchini and green beans. These veggies cook faster, so adding them toward the end ensures they don’t get mushy.
  6. Finish and serve: Once the vegetables are tender and the stew is rich and flavorful, taste and adjust seasoning if needed. Remove from heat and garnish with fresh parsley.
