3 large cucumbers, chopped
3 Roma tomatoes (also chopped)
1/2 chopped red onion
¼ green chili pepper, seeded and finely chopped (optional)
2 tablespoons. l. chopped cilantro
2 tablespoons. l. chopped parsley
1/2 tsp. chopped mint

FILLING:
3 tablespoons. l. olive oil
3 tablespoons. l. freshly squeezed lemon/lime juice
1/2 tsp. salt
¼ tsp. freshly ground black pepper
Preparation:⠀
Place cucumber, tomato, red onion, green pepper, cilantro and parsley in a large bowl.
In a small bowl or jar, whisk together olive oil, lemon juice, salt, and pepper until smooth.
Pour the dressing over the salad and mix carefully.
Serve immediately
