Sausage Gravy over Fresh Biscuits and Fried Taters and onions

Start your day off right with this classic Southern breakfast recipe for sausage gravy and fresh biscuits. Perfectly fluffy biscuits are topped with savory sausage gravy for a comforting and satisfying meal

Sausage Gravy:

1 pound ground sausage
3 tablespoons butter
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
3 cups milk

Fresh Biscuits:

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter, cold and cubed
3/4 cup milk

Fried Potatoes and Onions:

3 medium potatoes, peeled and sliced into thin rounds
1 medium onion, sliced
2 tablespoons vegetable oil

To make the sausage gravy:

In a large skillet, cook the sausage over medium heat until it is browned and crumbled.
Remove the sausage from the skillet with a slotted spoon and set it aside.
In the same skillet, melt the butter over medium heat.
Add the flour, salt, and pepper to the skillet and whisk to combine.
Slowly add the milk to the skillet, whisking constantly, until the mixture is smooth and thickened.
Add the cooked sausage back to the skillet and stir to combine.
Keep the gravy warm over low heat while you prepare the biscuits and potatoes.

To make the biscuits:

Preheat your oven to 450°F (230°C).
In a large mixing bowl, combine the flour, baking powder, and salt.
Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse sand.
Add the milk and stir until the dough comes together.
Turn the dough out onto a lightly floured surface and knead gently until it is smooth.
Roll the dough out to a 1/2-inch thickness and use a biscuit cutter or the rim of a glass to cut out rounds of dough.
Place the biscuits on a baking sheet and bake for 8-10 minutes, or until they are lightly golden brown.

To fry the potatoes and onions:

Heat the oil in a large skillet over medium heat.
Add the potatoes and onions to the skillet and cook, stirring occasionally, until they are tender and golden brown.
To serve, split the biscuits in half and place them on plates. Top with a generous spoonful of sausage gravy and a helping of fried potatoes and onions. Enjoy!
