Vegan Sesame Cauliflower and Broccoli!
Ingredients:
- 1 small cauliflower, cut into florets
- 1 broccoli, cut into florets
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce (or tamari for a gluten-free option)
- 2 tablespoons maple syrup or agave nectar
- 1 tablespoon rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 2 tablespoons sesame seeds
- 4 green onions, chopped (for garnish)
- Cooked rice or quinoa (optional, for serving)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the cauliflower and broccoli florets with 1 tablespoon of sesame oil until evenly coated. Spread the vegetables on a baking sheet lined with parchment paper.
- Roast the cauliflower and broccoli in the preheated oven for about 20-25 minutes or until they are tender and slightly browned, stirring halfway through.
- In the meantime, prepare the sauce. In a small bowl, whisk together the remaining 1 tablespoon of sesame oil, soy sauce, maple syrup, rice vinegar, minced garlic, and grated ginger.
- Once the cauliflower and broccoli are done roasting, transfer them to a large mixing bowl. Pour the sesame sauce over the roasted vegetables and toss until they are well coated.
- Sprinkle sesame seeds over the vegetables and toss again to distribute them evenly.
- Serve the Vegan Sesame Cauliflower and Broccoli over cooked rice or quinoa, if desired. Garnish with chopped green onions.
