Skinny Banana Bread or Muffins
Ingredients:
- 1 1/2 cups mashed ripe bananas (about 3 bananas)
- 1/3 cup plain nonfat Greek yogurt
- 1/3 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour or all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Optional: 1/2 cup chopped nuts or chocolate chips (if desired)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or muffin tin, or line the muffin tin with paper liners.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the Greek yogurt, applesauce, honey or maple syrup, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
- In a separate bowl, whisk together the whole wheat flour (or all-purpose flour), baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- If desired, fold in chopped nuts or chocolate chips into the batter.
- Pour the batter into the prepared loaf pan or scoop it into the muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for about 20-25 minutes for muffins or 50-60 minutes for a loaf, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
