SMASH BURGER QUESADILLA

Ingredients:

For the Smash Burgers:

  • 1 lb ground beef (80% lean)
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese

For the Quesadilla Toppings:

  • Sliced red onions
  • Sliced tomatoes
  • Pickles, chopped
  • Mustard and ketchup (or your preferred burger condiments)

For the Special Sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon pickle juice
  • Salt and pepper, to taste

Instructions:

  1. Prepare Smash Burgers:
    • Divide the ground beef into small portions (about 2-3 ounces each) and form them into small balls. Heat a cast-iron skillet or griddle over medium-high heat.
  2. Smash the Burgers:
    • Place a ball of ground beef on the hot surface and use a spatula to smash it flat. Season with salt and pepper. Cook for 2-3 minutes until the edges are crispy. Flip and cook the other side until it reaches your desired level of doneness.
  3. Assemble Quesadillas:
    • Lay a tortilla on a flat surface. Place a portion of the shredded cheddar cheese on one half of the tortilla. Add a smash burger on top of the cheese.
  4. Add Toppings:
    • Layer sliced red onions, tomatoes, and chopped pickles over the smash burger.
  5. Make Special Sauce:
    • In a small bowl, mix together mayonnaise, ketchup, yellow mustard, pickle juice, salt, and pepper to create the special sauce.
  6. Drizzle Special Sauce:
    • Drizzle a spoonful of the special sauce over the toppings.
  7. Fold and Cook:
    • Fold the other half of the tortilla over the toppings to create a half-moon shape. Place the quesadilla on the skillet and cook for 2-3 minutes on each side until the tortilla is crispy, and the cheese is melted.
  8. Slice and Serve:
    • Remove from the skillet, let it cool for a minute, then slice into wedges. Serve with extra special sauce for dipping.
