Ingredients:
For the Smash Burgers:
- 1 lb ground beef (80% lean)
- Salt and pepper, to taste
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
For the Quesadilla Toppings:
- Sliced red onions
- Sliced tomatoes
- Pickles, chopped
- Mustard and ketchup (or your preferred burger condiments)
For the Special Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 teaspoon pickle juice
- Salt and pepper, to taste
Instructions:
- Prepare Smash Burgers:
- Divide the ground beef into small portions (about 2-3 ounces each) and form them into small balls. Heat a cast-iron skillet or griddle over medium-high heat.
- Smash the Burgers:
- Place a ball of ground beef on the hot surface and use a spatula to smash it flat. Season with salt and pepper. Cook for 2-3 minutes until the edges are crispy. Flip and cook the other side until it reaches your desired level of doneness.
- Assemble Quesadillas:
- Lay a tortilla on a flat surface. Place a portion of the shredded cheddar cheese on one half of the tortilla. Add a smash burger on top of the cheese.
- Add Toppings:
- Layer sliced red onions, tomatoes, and chopped pickles over the smash burger.
- Make Special Sauce:
- In a small bowl, mix together mayonnaise, ketchup, yellow mustard, pickle juice, salt, and pepper to create the special sauce.
- Drizzle Special Sauce:
- Drizzle a spoonful of the special sauce over the toppings.
- Fold and Cook:
- Fold the other half of the tortilla over the toppings to create a half-moon shape. Place the quesadilla on the skillet and cook for 2-3 minutes on each side until the tortilla is crispy, and the cheese is melted.
- Slice and Serve:
- Remove from the skillet, let it cool for a minute, then slice into wedges. Serve with extra special sauce for dipping.
