- 4 boneless pork chops (about 4 ounces each)
- 1 teaspoon olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced

Instructions:
- Season the pork chops with salt and pepper to taste.

- Pour the chicken broth into the skillet and bring it to a simmer.
- Return the pork chops to the skillet, nestling them into the vegetable mixture.
- Cover the skillet and let the pork chops simmer for about 15-20 minutes, or until they are cooked through.
- Check the seasoning and adjust salt and pepper if needed.
- Serve the smothered pork chops with the vegetable mixture on top.
