Soft Batch Vegan Carob Chip and Walnut Cookies

Ingredients:
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegan butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup unsweetened applesauce
1/2 cup vegan carob chips
1/2 cup chopped walnuts
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
In a medium-sized mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
In a separate large mixing bowl, cream together the softened vegan butter, brown sugar, and granulated sugar until light and fluffy.
Add the vanilla extract and unsweetened applesauce to the wet ingredients mixture, and mix until well combined.
Gradually add the dry ingredients mixture to the wet ingredients mixture, stirring until a soft cookie dough forms.
Gently fold in the vegan carob chips and chopped walnuts until evenly distributed throughout the dough.
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie for spreading.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
