Ingredients:

  • 1 can (14.75 ounces) pink or red salmon, drained and bones removed
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (green or red)
  • 2 tablespoons chopped fresh parsley
  • 1 large egg, beaten
  • 1/2 cup cornmeal or breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
  • Salt and black pepper to taste
  • Vegetable oil for frying

Instructions:

  1. In a large bowl, flake the drained salmon with a fork. Ensure that any bones are removed.
  2. Add chopped onion, bell pepper, and parsley to the salmon.
  3. In a small bowl, beat the egg, and then add it to the salmon mixture.
  4. In another bowl, combine the cornmeal or breadcrumbs, flour, baking powder, cayenne pepper (if using), salt, and black pepper.
  5. Gradually add the dry mixture to the salmon mixture, stirring until well combined. The mixture should hold together, but if it’s too wet, you can add a bit more cornmeal or breadcrumbs.
  6. Heat vegetable oil in a skillet over medium heat.
  7. Shape the salmon mixture into patties, about 2-3 inches in diameter.
  8. Carefully place the patties in the hot oil and fry until golden brown on both sides, about 3-4 minutes per side.
  9. Remove the salmon patties from the skillet and drain on paper towels to absorb any excess oil.
  10. Serve the Southern fried salmon patties hot, with your favorite sauce or a squeeze of lemon.
