Spicy Garlic & Scallion Sauce with Crunchy Tofu

Ingredients:
1 block of extra-firm tofu
1 tablespoon of cornstarch
1 tablespoon of olive oil
4 cloves of garlic, minced
2 scallions, thinly sliced
1 tablespoon of soy sauce
2 teaspoons of sriracha sauce
1 teaspoon of sugar
1 teaspoon of vinegar
Salt, to taste
Sesame seeds, for garnish
Instructions:
Drain the tofu and cut into cubes.
In a shallow dish, mix the cornstarch and salt. Roll the tofu cubes in the mixture to coat.
In a large pan, heat the oil over medium heat. Add the coated tofu cubes and cook until golden brown, about 5 minutes on each side.
Remove the tofu from the pan and set aside.
In the same pan, add the minced garlic and cook until fragrant, about 30 seconds.
Add the sliced scallions and cook until softened, about 2 minutes.
Add the soy sauce, sriracha sauce, sugar, and vinegar. Stir to combine.
Return the tofu to the pan and toss to coat in the sauce.
Serve the tofu with the sauce and sprinkle with sesame seeds.
