Stuffed Peppers

(Stuffed with Quinoa, Walnut/Mushroom “Meat”, Chickpeas, Topped with Avocado, Tomatoes, Cilantro, Red Onion and a Vegan Caesar Dressing) 🌱 🤤 😋
Sure! (Well not much of a recipe as I just season to taste as I go but here is the process I used)
Cook quinoa as you would normally with water, oil, sea salt (I used 1 cup and made 2 whole peppers/4 halves and had quinoa left over)
Soak Walnuts in hot water for about 10-15 mins to soften up a bit.
Add walnuts and mushrooms to food processor or chopper. Once all chopped and have ground meat consistency you can season as you would normally. Add a lil oil to your pan and you can cook it to your liking. (This “meat” can be eaten raw if only walnuts, I cook it when I use mushrooms because it intensifies the flavor)
I seasoned and cooked the chick peas separately then just built the pepper by layers.
Chopped Avocado, Tomatoes, Red Onions, and Cilantro. Season with a squeeze of lemon or lime, small amount of olive oil, dash of sea salt and pepper.

Once everything was prepped, I washed and cut my peppers added the quinoa first, “meat” second, Chickpeas 3rd
Bake for 25-30 mins at 350 to keep a nice bite to your pepper. Once done baking top with avocado salsa, dressing and parsley
