Stuffed salmon

Ingredients:

  • 2 salmon fillets (6-8 ounces each)
  • 1 cup seasoned breadcrumbs
  • 1/2 cup chopped cooked collard greens
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped celery
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, red bell pepper, celery, and garlic, and sauté until they become tender, about 5 minutes.
  3. Add the chopped collard greens to the skillet and continue to cook for another 2 minutes. Remove from heat and set aside.
  4. In a bowl, combine the seasoned breadcrumbs, lemon juice, paprika, dried thyme, dried oregano, salt, and pepper. Mix well.
  5. Place the salmon fillets on the prepared baking sheet. Use a sharp knife to make a horizontal slit along the side of each fillet, creating a pocket for the stuffing.
  6. Spoon the collard green mixture into the pocket of each salmon fillet, dividing it evenly between them.
  7. Press the seasoned breadcrumb mixture onto the top of each stuffed salmon fillet, forming a crust.
  8. Bake the stuffed salmon in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  9. Remove from the oven and let it rest for a few minutes before serving.
  10. Serve the stuffed salmon with your choice of sides, such as sweet potato mash or sautéed vegetables.
