Instructions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large skillet, heat the olive oil over medium heat. Add the onion, red bell pepper, celery, and garlic, and sauté until they become tender, about 5 minutes.
- Add the chopped collard greens to the skillet and continue to cook for another 2 minutes. Remove from heat and set aside.
- In a bowl, combine the seasoned breadcrumbs, lemon juice, paprika, dried thyme, dried oregano, salt, and pepper. Mix well.
- Place the salmon fillets on the prepared baking sheet. Use a sharp knife to make a horizontal slit along the side of each fillet, creating a pocket for the stuffing.
- Spoon the collard green mixture into the pocket of each salmon fillet, dividing it evenly between them.
- Press the seasoned breadcrumb mixture onto the top of each stuffed salmon fillet, forming a crust.
