stuffed shells. Made a tofu, cashew, spinach ricotta. Whipped up a vegan garlic bechamel sauce and topped that with Daiya mozzarella shreds.
We’re going to have a side spinach salad to pair with this rich dish. I’m feeling accomplished after not using recipes this time around. 2024 allow you room to experiment, fail, and taste again! Cheers.

3/4 cup soaked raw cashews
1 pkg firm tofu
2 cloves minced garlic
2 tbls lemon juice
2 tbls nooch
2 tbls olive oil
1 tsp salt
2 tsp oregano
Handful of spinach at the end
