Ingredients:
- 4 cups whole-grain bread cubes (whole-wheat or whole-grain)
- 1 cup chopped celery
- 1 cup chopped onion
- 1 cup chopped mushrooms
- 1 cup low-sodium chicken or vegetable broth
- 2 teaspoons olive oil
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- Cooking spray
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onions, celery, and mushrooms. Sauté until they become tender, about 5-7 minutes.
- Stir in the dried sage, dried thyme, salt, and black pepper. Cook for another minute or so to allow the flavors to meld.
- In a large mixing bowl, combine the sautéed vegetable mixture with the bread cubes. Pour the chicken or vegetable broth over the mixture and stir until the bread is well-moistened. Add more broth if needed to reach your desired consistency.
- Form the mixture into small stuffing balls, using your hands to shape them.
- Place the stuffing balls on a baking sheet sprayed with cooking spray.
- Bake in the preheated oven for 20-25 minutes or until the stuffing balls are lightly browned and crispy on the outside.
- Serve the Weight Watchers stuffing balls as a side dish with your favorite meal.
