SUPREME BEAN PIE

Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs (ensure they are vegan)
1/4 cup vegan butter, melted
1/4 cup granulated sugar
For the Filling:
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) cannellini beans, drained and rinsed
1 cup cooked quinoa
1/2 cup unsweetened applesauce
1/2 cup maple syrup
1/4 cup coconut oil, melted
1 tablespoon ground flaxseed
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Zest and juice of 1 lemon
1/2 cup chopped walnuts (optional, for extra texture)
Instructions:
Prepare the Crust:
Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish.
In a mixing bowl, combine the graham cracker crumbs, melted vegan butter, and granulated sugar. Mix well until the mixture resembles wet sand.
Press the mixture evenly into the bottom and up the sides of the prepared pie dish to form the crust.
Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden and set. Remove from the oven and let it cool while you prepare the filling.
Make the Filling:
In a food processor or blender, combine the drained and rinsed black beans, kidney beans, and cannellini beans.
Add the cooked quinoa, unsweetened applesauce, maple syrup, melted coconut oil, ground flaxseed, vanilla extract, ground cinnamon, ground nutmeg, salt, and the zest and juice of one lemon.
Blend or process until smooth and well combined. You may need to scrape down the sides of the bowl a few times to ensure everything is mixed evenly.
If using chopped walnuts, stir them into the bean mixture until evenly distributed.
Assemble and Bake:
Pour the bean filling into the pre-baked graham cracker crust, spreading it out evenly with a spatula.
Smooth the top with the back of a spoon or spatula.
Bake the Pie:
Place the pie in the preheated oven and bake for 40-45 minutes, or until the filling is set and the edges are slightly golden.
Cool and Serve:
Remove the pie from the oven and let it cool completely on a wire rack.
Once cooled, slice and serve the Vegan Supreme Bean Pie. It can be served chilled or at room temperature.
