sweet potato and white beans hummus

Ingredients:
-4 sweet potatoes peeled and cut in medium sized pieces
-1/2 purple onion cut in chunks
-8 cloves of garlic (unpeeled)
-1 can of drained navy or great northern beans
-Olive oil (you can use neutral, but olive is better)
-4 bay leafs
-Juice of 1 lemon (or to taste)
-3 tablespoons of tahini (or to taste)
-Salt and pepper to taste
-1 tablespoon of dried thyme
-Ice cold water (about 1/2 cup)
-Optional: chopped parsley, chili flakes and sesame seeds to garnish
Directions:
-Preheat oven at 425°F/ 220°C
-Place the peeled and chopped sweet potatoes, purple onion, garlic cloves, and bay leafs in a bowl, add oil, salt and pepper, and mix them until fully coated. Place them on a bakig sheet, and bake for 30-40 minutes.
-Throw the baked ingredients, except for the bay leaf (garlic should come out of the skin as a paste) in a food processor (or blender), with the lemon juice, tahini, dried thyme, salt and pepper to taste, and a couple of table spoons of oil. While processing or blending, add the ice cold water little by little untill you get a creamy and smooth consistency. (If using a blender, you might need to use more liquids, water will make it less consistent, but adding oil little by little while blending will thicken it).
-Taste and adjust seasoning (salt, pepper, thyme, lemon or tahini)
-Serve in a plate, make a swirl with a spoon, and top with olive oil, salt and pepper, dried thyme and optional chopped parsley, chili flakes and sesame seeds.
-Enjoy it as a dip with pita or flat bread, chips, slices of carrots and cucumbers, sandwiches or whatever you prefer!
