Ingredients:
For the Bread:
- 2 cups all-purpose flour or a lighter flour alternative (e.g., whole wheat, almond flour)
- 1/2 cup unsweetened applesauce (to replace some of the sugar)
- 1/4 cup granulated sugar or a sugar substitute suitable for baking
- 1/4 cup non-fat Greek yogurt
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup unsweetened almond milk (or another low-calorie milk)
For the Sweetened Condensed Milk (a lighter version):
- 1 cup fat-free sweetened condensed milk (available in some stores)
- 1/4 cup unsweetened applesauce
- 1/2 tsp vanilla extract
Instructions:
For the Lightened-Up Sweetened Condensed Milk:
- In a small saucepan, combine the fat-free sweetened condensed milk, unsweetened applesauce, and vanilla extract. Heat over low heat, stirring continuously until well combined. Remove from heat and let it cool.
For the Bread:
- Preheat your oven to 350°F (175°C) and grease or line a loaf pan.
- In a mixing bowl, combine the flour, sugar (or sugar substitute), baking powder, baking soda, and salt.
- In another bowl, mix the eggs, unsweetened applesauce, non-fat Greek yogurt, vanilla extract, and unsweetened almond milk.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Drizzle the lightened-up sweetened condensed milk mixture over the top of the batter.
- Use a knife or toothpick to swirl the condensed milk into the bread batter.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. The baking time may vary, so monitor it closely.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely
