Sweetened Condensed Milk Bread

Ingredients:

For the Bread:

  • 2 cups all-purpose flour or a lighter flour alternative (e.g., whole wheat, almond flour)
  • 1/2 cup unsweetened applesauce (to replace some of the sugar)
  • 1/4 cup granulated sugar or a sugar substitute suitable for baking
  • 1/4 cup non-fat Greek yogurt
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened almond milk (or another low-calorie milk)

For the Sweetened Condensed Milk (a lighter version):

  • 1 cup fat-free sweetened condensed milk (available in some stores)
  • 1/4 cup unsweetened applesauce
  • 1/2 tsp vanilla extract

Instructions:

For the Lightened-Up Sweetened Condensed Milk:

  1. In a small saucepan, combine the fat-free sweetened condensed milk, unsweetened applesauce, and vanilla extract. Heat over low heat, stirring continuously until well combined. Remove from heat and let it cool.

For the Bread:

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan.
  2. In a mixing bowl, combine the flour, sugar (or sugar substitute), baking powder, baking soda, and salt.
  3. In another bowl, mix the eggs, unsweetened applesauce, non-fat Greek yogurt, vanilla extract, and unsweetened almond milk.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Drizzle the lightened-up sweetened condensed milk mixture over the top of the batter.
  7. Use a knife or toothpick to swirl the condensed milk into the bread batter.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. The baking time may vary, so monitor it closely.
  9. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely
