Made my own tortilla and made taco salad with seasoned black beans as the protein…. Soooo good!
Edit: Make your own tortilla bowl is easy! I found several different methods but we chose to lightly fry a burrito sized flour tortilla in avocado oil on both sides until puffy. Bake at 350 for about 20 minutes. Wrap the fried tortilla over an upside down oven safe .
As for what’s in the salad, you can put whatever you like but I did: Romaine lettuce, seasoned black beans in sauce from a can add taco seasoning to taste, chopped tomatoes, bell peppers, sweet corn kernels, black olives, vegan shredded cheese, homemade pico de gallo, plant based ranch dressing, pickled jalapenos, and diced avocado.
