Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup honey (or maple syrup for a vegan option)
  • 2 cups old-fashioned oats
  • Optional: Chocolate chips for dipping

Instructions:

  1. In a microwave-safe bowl or on the stovetop, heat the peanut butter and honey until they are easily mixable. If using a microwave, heat in 20-30 second intervals, stirring in between.
  2. In a large mixing bowl, combine the melted peanut butter and honey with the oats. Mix until well combined.
  3. Let the mixture cool slightly to make it easier to handle.
  4. Take small portions of the mixture and roll them into bite-sized balls. If the mixture is too sticky, you can wet your hands or chill it in the refrigerator for a short time.
  5. Optional: Melt chocolate chips in the microwave or on the stovetop. Dip each peanut butter ball into the melted chocolate, covering it entirely, and then place it on a parchment-lined tray.
  6. Refrigerate the peanut butter balls for at least 30 minutes or until they firm up.
  7. Once chilled, store the chocolate peanut butter balls in an airtight container in the refrigerator.
