Toasted bread with creamy mushrooms
Toasted bread with creamy mushrooms, mozzarella, cheddar, onion and garlic
Recipe: 250g chestnut mushrooms (or whatever mushrooms you like)
2 garlic cloves
1 onion
2 handfuls of mozzarella and cheddar
Roughly 200ml double cream
Put some butter in a pan, fry mushrooms for a few mins then add onions and garlic cook until mushrooms have slightly gone crispy around the edges. Add cream and simmer for a few mins until the sauce has thickened. Add cheese and mix through until melted. Serve with toast and have for breakfast or brunch.
It’s quite a big batch, you can put the rest in the fridge and it should be good for 4 days. Just dish up what you’ll need per serving and heat up in the microwave for a min or so when using it from the fridge.
