Tofu & veggie stir with PB sauce and sesame seeds

Ingredients
-1/3cup peanut butter
-3Tb spoons tamari
-2tb spoons garlic
1 tbspoon sambal oelek (or replace with 1/2 to 1 teaspoon chili flakes)
1tbspoon lime Juice
1/2cup water
A pinch of salt
Mix well in a blender until smooth but not too liquid. If so, add a teaspoon cornstarch and blend well. Réserve the sauce for later.
For the stir:
Add sesame oil to a large pan or wok on a medium-low temperature stove. Add 1 pound diced, well drained extra firm tofu and stir until golden on all sides. Set aside.
In the same pan or wok, add the sliced veggies of your choice (I use carrots, brocoli, cauliflower, onions and bokchoï, but you may choose the ones you prefer most). Bring to medium-high and add a little bit of water at a time to steam veggies well, so they are softer on the sides but not moist. Add the tofu and stir well.
Serve on the ingredient of your choice (noodles, quinoa, rice, whichever you please). Add a little bit of lime juice and a dash of sesame seeds, et voilà!
