Turkey White Bean Pumpkin Chili

Ingredients:

  • 1 lb ground turkey
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) pumpkin puree
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions:

  1. Sauté Aromatics:
    • In a large pot or Dutch oven, heat olive oil over medium heat.
    • Add diced onions, minced garlic, and diced bell pepper. Sauté until onions are translucent and the vegetables are softened.
  2. Brown Turkey:
    • Add ground turkey to the pot and cook until browned, breaking it apart with a spoon as it cooks.
  3. Season:
    • Add chili powder, ground cumin, smoked paprika, cinnamon, salt, and pepper. Stir to coat the turkey and vegetables with the spices.
  4. Add Pumpkin and Tomatoes:
