Ingredients:

  • Salt and black pepper to taste

For Cooking:

  • 1 large onion, thinly sliced
  • 2 celery ribs, chopped
  • 2 carrots, peeled and sliced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 cup chicken broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • Salt and black pepper to taste

For Gravy:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or a low-carb alternative)
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix together the olive oil, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Coat the turkey wings evenly with this marinade and let them marinate for at least 30 minutes.
  3. In a large, oven-safe pot or Dutch oven, heat some oil over medium-high heat. Brown the marinated turkey wings on all sides.
  4. Remove the turkey wings and set them aside. In the same pot, add a bit more oil if needed and sauté the onions, celery, carrots, and minced garlic until softened.

  8. In the last 30 minutes of cooking, prepare the gravy. In a saucepan, melt butter, add flour, and whisk until a roux forms. Gradually add the broth from the pot, whisking continuously until the gravy thickens. Season with salt and black pepper.
  9. Serve the turkey wings over rice, mashed potatoes, or your favorite side, drizzled with the delicious homemade gravy.
