User Egg Roll in a Bowl

Ingredients:

  • 1 lb ground pork (or any ground meat of your choice)
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon Sriracha or hot sauce (adjust to taste)
  • 1 bag coleslaw mix (shredded cabbage and carrots)
  • Green onions, sliced, for garnish

Instructions:

  1. In a large skillet or wok, heat the sesame oil and olive oil over medium heat.
  2. Add the ground pork and cook until browned, breaking it apart with a spatula as it cooks.
  3. Add the sliced onion, minced garlic, and grated ginger to the skillet. Sauté until the onion is translucent and the garlic is fragrant.
  4. In a small bowl, mix together the soy sauce (or tamari), rice vinegar, sesame seeds, and Sriracha.
  5. Pour the sauce mixture over the pork and vegetables. Stir to combine.
  6. Add the coleslaw mix to the skillet. Stir well to coat the cabbage and carrots with the sauce. Cook until the cabbage is wilted but still has some crunch.
  7. Taste and adjust the seasoning, adding more soy sauce, Sriracha, or rice vinegar as needed.
  8. Serve hot, garnished with sliced green onions.
