Vegan and gluten free cake

INGREDIENTS:
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup unsweetened almond milk (or any plant-based milk of your choice)
1/2 cup vegetable oil
2 tablespoons apple cider vinegar
2 teaspoons vanilla extract
FOR THE CHAI FROSTING:
1/2 cup vegan butter, softened
2-3 cups powdered sugar
2 tablespoons brewed chai tea, cooled
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cardamom
Pinch of ground cloves
Pinch of ground nutmeg
INSTRUCTIONS:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and spices (cinnamon, ginger, cardamom, cloves, and nutmeg).
In a separate bowl, mix together the almond milk, vegetable oil, apple cider vinegar, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
FOR THE CHAI FROSTING:
In a large mixing bowl, beat the softened vegan butter until creamy.
Gradually add in the powdered sugar, 1 cup at a time, until you reach your desired sweetness and consistency.
Mix in the brewed chai tea, vanilla extract, and spices (cinnamon, ginger, cardamom, cloves, and nutmeg) until well combined.
Once the cakes have cooled completely, frost the top of one cake layer with a generous amount of chai frosting.
Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
Decorate the cake as desired with additional spices or toppings like chopped nuts or edible flowers.
