Here’s a recipe for vegan avocado rolls that you can make at home:
Ingredients:
8 sheets of nori seaweed
2 ripe avocados
1 tablespoon freshly squeezed lemon juice
Salt, to taste
Optional fillings: sushi rice, carrots, cucumber, bell pepper, etc.
Instructions:
Cut the avocados in half, remove the pit and peel. Mash the avocado in a small bowl with a fork.
Mix in the lemon juice and salt, set aside.
Place a sheet of nori seaweed on a sushi rolling mat, shiny side down.
Spoon about 2 tablespoons of the mashed avocado onto the center of the nori sheet.
Place any additional fillings of your choice on top of the avocado.
Roll the mat tightly, pressing down on the fillings to help shape the roll.
Use a sharp knife to cut the roll into 8 even pieces. Repeat with remaining ingredients.
Serve the avocado rolls with soy sauce and wasabi, if desired.
