Ingredients:

  • 1 cup vegan chocolate chips
  • 1 cup vegan sweetened condensed coconut milk
  • 1/4 cup vegan Baileys Irish Cream (store-bought or homemade)
  • 1 cup vegan Maltesers-style candies, crushed (plus extra for topping)
  • A pinch of salt

Instructions:

  1. Prepare a Pan:
    • Line a square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Melt the Chocolate:
    • In a heatproof bowl, melt the vegan chocolate chips using a double boiler or by microwaving in 20-second intervals, stirring until smooth.
  3. Combine Ingredients:
    • In a saucepan over low heat, combine the vegan sweetened condensed coconut milk, melted chocolate, vegan Baileys Irish Cream, and a pinch of salt. Stir continuously until well combined and smooth.
  4. Add Crushed Maltesers:
    • Remove the saucepan from heat and gently fold in the crushed vegan Maltesers-style candies.
  5. Transfer to Pan:
    • Pour the fudge mixture into the prepared baking pan, spreading it evenly.
  6. Chill:
    • Place the pan in the refrigerator and let the fudge chill for at least 4 hours or until completely set.
  7. Slice and Serve:
    • Once set, use the parchment paper overhang to lift the fudge from the pan. Cut it into squares, and top each piece with a few extra crushed Maltesers.
