Vegan Baileys and Maltesers Fudge

Ingredients:
- 1 cup vegan chocolate chips
- 1 cup vegan sweetened condensed coconut milk
- 1/4 cup vegan Baileys Irish Cream (store-bought or homemade)
- 1 cup vegan Maltesers-style candies, crushed (plus extra for topping)
- A pinch of salt
Instructions:
- Prepare a Pan:
- Line a square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Melt the Chocolate:
- In a heatproof bowl, melt the vegan chocolate chips using a double boiler or by microwaving in 20-second intervals, stirring until smooth.
- Combine Ingredients:
- In a saucepan over low heat, combine the vegan sweetened condensed coconut milk, melted chocolate, vegan Baileys Irish Cream, and a pinch of salt. Stir continuously until well combined and smooth.
- Add Crushed Maltesers:
- Remove the saucepan from heat and gently fold in the crushed vegan Maltesers-style candies.
- Transfer to Pan:
- Pour the fudge mixture into the prepared baking pan, spreading it evenly.
- Chill:
- Place the pan in the refrigerator and let the fudge chill for at least 4 hours or until completely set.
- Slice and Serve:
- Once set, use the parchment paper overhang to lift the fudge from the pan. Cut it into squares, and top each piece with a few extra crushed Maltesers.
