Ingredients:
2 ripe bananas, mashed
1/2 cup all-purpose flour
1/4 cup cornstarch
1/4 cup brown sugar
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup non-dairy milk (such as almond milk)
1 tsp vanilla extract
Oil, for frying
Instructions:
In a mixing bowl, combine the mashed bananas, flour, cornstarch, brown sugar, baking powder, salt, and cinnamon. Mix well.
Add the non-dairy milk and vanilla extract to the bowl and mix until well combined.
Heat about 1 inch of oil in a frying pan over medium heat.
Using a small cookie scoop or spoon, drop the batter into the hot oil, making small fritters.
Fry the fritters for 2-3 minutes on each side or until golden brown.
Remove the fritters from the oil with a slotted spoon and place them on a paper towel-lined plate to drain off excess oil.
Serve the fritters warm with your favorite dipping sauce.
