Vegan Banana Fritters
Ingredients:
- 2 ripe bananas
- 1/2 cup all-purpose flour (or substitute with gluten-free flour if needed)
- 2 tablespoons sugar (adjust to taste)
- 1/2 teaspoon baking powder
- A pinch of salt
- 1/4 cup non-dairy milk (such as almond milk, soy milk, or coconut milk)
- 1 teaspoon vanilla extract
- Oil for frying (such as vegetable oil or coconut oil)
Instructions:
- Prepare the Batter:
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the flour, sugar, baking powder, and salt to the mashed bananas. Mix well.
- Gradually pour in the non-dairy milk and vanilla extract, stirring until you have a smooth batter. Ensure there are no lumps.
- Fry the Fritters:
- Heat oil in a frying pan over medium heat. Make sure the oil is hot but not smoking.
- Drop spoonfuls of the batter into the hot oil, leaving some space between each fritter.
- Fry the fritters for 2-3 minutes on each side, or until they turn golden brown and crispy.
- Use a slotted spoon to transfer the fritters to a plate lined with paper towels to drain excess oil.
- Serve:
- Serve the vegan banana fritters warm.
- Optionally, you can dust them with powdered sugar or serve with a drizzle of maple syrup or a dollop of dairy-free whipped cream.
