Vegan Banana Strawberry Cake

Ingredients:
2 cups all-purpose flour
1 1/2 cups sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup unsweetened almond milk
1/3 cup coconut oil, melted
1 tsp vanilla extract
2 ripe bananas, mashed
1 cup fresh strawberries, chopped
Instructions:
Preheat your oven to 350°F (175°C) and grease a 9-inch (23cm) bundt pan.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mix together the almond milk, melted coconut oil, and vanilla extract.
Add the mashed bananas to the wet ingredients and stir to combine.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in the chopped strawberries.
Pour the batter into the prepared bundt pan and smooth out the top.
Bake for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Serve the cake as is, or with a dollop of vegan whipped cream and a few extra fresh strawberries on top. Enjoy!
