Vegan Banana Vanilla Cake
Ingredients:
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup vegan butter, softened
1 cup granulated sugar
2 ripe bananas, mashed
1 tsp vanilla extract
1 cup almond milk
1 tbsp apple cider vinegar
Instructions:
Preheat your oven to 350°F (180°C). Grease and flour a 9-inch cake pan.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
In a large mixing bowl, cream together the vegan butter and sugar until light and fluffy. Add the mashed bananas and vanilla extract, and mix until well combined.
In a small bowl, whisk together the almond milk and apple cider vinegar. Add this to the banana mixture and stir until well combined.
Add the dry ingredients to the wet ingredients and mix until just combined.
Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Remove from the oven and allow to cool completely in the pan. Once cool, remove from the pan and serve.
