Vegan Berry Nice Cream

3 ripe bananas, sliced and frozen
1 cup mixed berries (strawberries, blueberries, raspberries, blackberries), frozen
1 teaspoon vanilla extract (optional)
A splash of plant-based milk (almond, soy, coconut, etc.), if needed for blending
Prepare the Fruit:Slice the bananas and freeze them for at least 2 hours, or until fully frozen.
Ensure the berries are frozen as well.

Blend the Ingredients:In a high-speed blender or food processor, add the frozen banana slices and frozen berries.
If using, add the vanilla extract.
Blend until the mixture is smooth and creamy. You may need to stop and scrape down the sides or use a tamper to help the blending process.
If the mixture is too thick and difficult to blend, add a small splash of plant-based milk to help with the blending. Be careful not to add too much, as you want the consistency to be thick like ice cream.

Serve:Once the mixture is smooth and creamy, transfer it to a bowl.
You can enjoy it immediately as soft-serve nice cream or transfer it to a container and freeze for an additional 1-2 hours for a firmer texture.

Shredded coconut
Vegan chocolate chips

For a sweeter nice cream, you can add a tablespoon of maple syrup or agave nectar while blending.
You can experiment with different frozen fruits for variety, such as mango, peach, or pineapple.
