Ingredients:
1 package of Beyond Beef Ground (or equivalent plant-based ground meat)
1/2 cup of breadcrumbs
1/2 cup of oat milk (or any plant-based milk)
1/2 cup of chopped onion
1/2 cup of chopped celery
1/2 cup of chopped carrots
2 cloves of minced garlic
2 tablespoons of tomato paste
1 tablespoon of soy sauce
1 tablespoon of Worcestershire sauce
1 tablespoon of dried thyme
1 teaspoon of dried sage
1 teaspoon of salt
1/2 teaspoon of black pepper
Instructions:
Preheat the oven to 350°F.
In a large mixing bowl, combine the Beyond Beef Ground, breadcrumbs, oat milk, chopped onion, chopped celery, chopped carrots, minced garlic, tomato paste, soy sauce, Worcestershire sauce, dried thyme, dried sage, salt and black pepper.
Mix all the ingredients together until well combined.
Transfer the mixture to a greased loaf pan and press it down to form a loaf shape.
Bake the meatloaf in the oven for 40-45 minutes or until it’s cooked through.
Once the meatloaf is done, let it cool for a few minutes before slicing and serving.
Vegan Mashed Potatoes Recipe:
Ingredients:
4 large potatoes, peeled and cubed
1/4 cup of oat milk (or any plant-based milk)
2 tablespoons of vegan butter
1/2 teaspoon of salt
1/4 teaspoon of black pepper
Instructions:
In a large pot, boil the cubed potatoes in salted water until they are soft and tender.
Drain the water and transfer the potatoes to a mixing bowl.
Add in the oat milk, vegan butter, salt, and black pepper.
Using a potato masher or a fork, mash the potatoes until they are smooth and creamy.
Taste and adjust the seasoning if needed.
Serve the mashed potatoes hot with the vegan Beyond Meatloaf and green beans.
Vegan Green Beans Recipe:
Ingredients:
1 pound of fresh green beans, trimmed
2 tablespoons of vegan butter
2 cloves of minced garlic
1/4 teaspoon of salt
1/4 teaspoon of black pepper
Instructions:
In a large skillet, heat the vegan butter over medium-high heat.
Add in the minced garlic and sauté for 1-2 minutes until fragrant.
Add in the trimmed green beans, salt, and black pepper.
Cook the green beans for 5-7 minutes until they are tender-crisp.
Serve the green beans hot with the vegan Beyond Meatloaf and mashed potatoes.
