Vegan Big Mac

Ingredients:

For the Vegan “Special Sauce”:

  • 1/2 cup vegan mayonnaise
  • 2 tablespoons sweet relish
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon white wine vinegar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Vegan Big Mac “Meat” Patties:

  • 1 1/2 cups cooked and drained canned chickpeas (or 1 can)
  • 1/4 cup breadcrumbs
  • 2 tablespoons vegan mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

For Assembling:

  • 4 vegan burger buns
  • 2 cups shredded lettuce
  • 1 cup sliced pickles
  • 1/2 cup minced white onion
  • 4 slices vegan cheese
  • 1 tomato, sliced

Instructions:

For the Vegan “Special Sauce”:

  1. In a small bowl, combine vegan mayonnaise, sweet relish, ketchup, yellow mustard, white wine vinegar, onion powder, garlic powder, salt, and pepper. Mix well. Set aside.

For the Vegan Big Mac “Meat” Patties:

  1. In a food processor, pulse the chickpeas until they are roughly chopped but still have some texture.
  2. In a large mixing bowl, combine the chopped chickpeas, breadcrumbs, vegan mayonnaise, yellow mustard, ketchup, soy sauce, onion powder, garlic powder, salt, and pepper. Mix until well combined.
  3. Shape the mixture into four patties.
  4. Heat a skillet over medium heat and add a bit of oil. Cook the patties for about 3-4 minutes on each side, or until they are golden brown and heated through.

Assembling the Vegan Big Mac:

  1. Toast the burger buns in a toaster or on a skillet.
  2. Spread a layer of the special sauce on the bottom half of each bun.
  3. Place a layer of shredded lettuce on top of the sauce.
  4. Add a “meat” patty on top of the lettuce.
  5. Add a slice of vegan cheese on top of the patty.
  6. Place a layer of pickles, followed by a layer of sliced onions.
  7. Add a slice of tomato on top.
  8. Spread another layer of the special sauce on the top half of the bun and place it on top of the assembled ingredients.
  9. Press the burger gently to hold everything together.
  10. Repeat the process to assemble the remaining burgers.
