Vegan Big Mac

Ingredients:
For the burger patties:
1 can of black beans, drained and rinsed
1/2 cup of cooked brown rice
1/4 cup of bread crumbs
1/4 cup of chopped onion
1/4 cup of chopped green pepper
1 tablespoon of soy sauce
1/2 teaspoon of garlic powder
Salt and pepper to taste
For the special sauce:
1/4 cup of vegan mayo
2 tablespoons of vegan Thousand Island dressing
1 tablespoon of yellow mustard
1 tablespoon of finely chopped onion
1 tablespoon of sweet pickle relish
For the burger assembly:
4 vegan hamburger buns
Vegan cheddar cheese, sliced
Lettuce, shredded
Pickles, sliced
Onion, sliced
Instructions:
Preheat your oven to 375°F.
To make the burger patties, combine all the ingredients in a food processor and blend until the mixture is smooth.
Divide the mixture into four equal portions and form each portion into a patty shape.
Place the patties on a baking sheet lined with parchment paper and bake in the oven for 20-25 minutes, flipping them over halfway through.
While the patties are cooking, make the special sauce by combining all the ingredients in a small bowl and mixing well.
Toast the hamburger buns.
Assemble the burgers by placing a slice of vegan cheddar cheese on the bottom bun, followed by a cooked patty, a dollop of special sauce, shredded lettuce, sliced pickles, sliced onion, and another slice of vegan cheddar cheese.
Place the top bun on the burger and enjoy your vegan Big Mac!
