Vegan biscuit “Ratatouille”

Ingredients:

For test:
* Flour – 160 g
* Vegetable oil – 80 ml
* Water – 70 ml (boiling water).
* Baking powder – 1 tsp
* Salt – to taste.

For sauce:
* Half a bell pepper.
* 1 medium sized tomato.
* Half of a small onion.
* 1 clove of garlic.
* Vegetable oil and spices.

For filling:
* Zucchini – 1 pc. small size.
* Eggplant – 1 pc. small size.
* Tomatoes – 3 pcs. small size.
* Garlic – 1 clove.
* Vegetable oil – 1-2 tbsp.
* Salt, herbs and spices – to taste. I used fresh thyme, dried basil, salt.

Recipe:

Preparing the dough:
Mix all dry ingredients in a deep bowl.
Then add vegetable oil and boiling water to a bowl with dry ingredients. Knead the dough.
Wrap the finished dough in cling film or a towel, and put in the refrigerator for 30 minutes.

Preparing the sauce:
Wash tomatoes and peppers. Cut the tomato into 4 pieces. Cut half of a small onion into 2 pieces. Garlic does not need to be peeled.

Lay all vegetables on a baking sheet. Lubricate each piece well with vegetable oil, add spices and herbs. Mix.

Send a baking sheet with vegetables to a preheated oven to 180 degrees. Bake vegetables until they are soft.

Peel the garlic, tomato and half of the bell pepper.
Place all vegetables in a blender and blend until smooth.
The sauce is ready.

Preparing the vegetables for the filling:
Wash zucchini, tomatoes and eggplant and cut very thinly. Finely chop 1 garlic clove.

Cooking galette:
Roll out the dough into a round layer. Transfer the dough to a baking sheet.
Lubricate the center of the layer with the prepared sauce and put vegetables in a circle on top of the sauce, alternating: a tomato circle, an eggplant circle, a zucchini circle.

Wrap the free edges of the dough and press lightly, forming the sides.

In a separate bowl, mix chopped garlic, any herbs (I used fresh thyme) and 2 tbsp. vegetable oil. I also added dried basil. Mix everything well. Brush the vegetables with the mixture.

Bake the biscuit at 180 degrees for 35-50 minutes.
