Vegan Black Forest Brownies
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil or melted coconut oil
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 cup vegan chocolate chips or chopped vegan chocolate
- 1/2 cup cherries, pitted and chopped (fresh or canned)
- Vegan whipped cream or coconut whipped cream, for topping (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease or line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until well combined.
- Add the vegetable oil, applesauce, and vanilla extract to the dry ingredients. Stir until just combined, being careful not to overmix.
- Fold in the vegan chocolate chips and chopped cherries until evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan and spread it out evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs attached.
- Remove the brownies from the oven and allow them to cool in the pan for at least 10-15 minutes before slicing.
- Once cooled, slice the brownies into squares and serve topped with vegan whipped cream or coconut whipped cream if desired.
